Bruschetta is an Italian food staple that dates to around the 15th century and is closely tied to the olive harvest. Throughout the harvest history, olives have generally been delivered to the closest mill for pressing in November or December. The farmers transport their crop and typically take some country bread along with them and watch the processing of their olives by a small fireplace in the corner of the pressing room. When the fresh oil emerges from the press, the producer toasts a bit of their bread to sample the newly-born oil.
