Mortadella*
This is the classic, uncured, "original" Italian bologna and in no way should it be confused with the processed lunchmeat most of us grew up with. This is made from finely ground prime pork speckled with small cubes of pork jowl, seasoned with sea salt and celery powder, and slow roasted for 10 hours. No nitrates or preservatives, just amazing flavor.
